Chef de Cuisine, William Brunyansky brings a wealth of international expertise to The Charles Inn. Born in Niagara Falls, this individual has made his dream of becoming a Chef and master of his domain a reality in his own backyard. His culinary skills have been honed at some of the world's most acclaimed properties including the Michelin rated Gavroche in the UK and the Ritz Carlton in Naples, Florida. He also apprenticed under the tutorship of Master Chef Lee Parsons.

Chef William's menus reflect his love of quality food and the tradional culinary methods. Every dish Chef William creates is a unique and artistic masterpiece, immaculate and arousing to all senses. Appetizers through dessert are built from the most perfect balance of colours, textures, scents and taste. His culinary style is reminiscent of French Contemporary infused with a regional attitude. The flavour of each plate however, is Chef William's signature. While the presentation is clean and simple, the flavours are diverse and refreshing; the way food is supposed to taste. "Niagara has such a wonderful and unique bounty of fresh produce that you don't have to cover up the taste. Simply put, my feeling is that a carrot should taste like a carrot", he jokes. "I try to bring out the natural flavours in the food".
